Fritelle di Patate
FRITELLE DI PATATE
INGREDIENTS
1 lb potatoes
10 oz self raising Flour
5 oz sugar
3 eggs
rind and juice of 1 orange
3 teaspoons baking powder
4 tablespoons of Rum
2 oz sultanas (optional)
METHOD
Boil, peel and mash the potatoes ( make sure that they are thoroughly mashed) and leave to cool.
Add eggs one at a time, pinch of salt, sugar, grated rind and juice of an orange, rum and finally the flour and baking powder. Mix all ingredients together and leave to rest for 1 hour.
Fry the fritters in a deep pan of oil or chipper using half a tablespoon of mixture for each fritter. Fry until golden brown on each side then drain on kitchen roll.
Serve dusted with caster/icing sugar either hot or cold.
If desired, you can fry half the mixture as above and then add 2oz of sultanas to the remaing mixture and fry.
